- Red Peppers
- Rapeseed or Sunflower oil
- Balsamic vinegar
- Clove of garlic, finely chopped
- Salt and Pepper to taste
- Heat oven to 200°C
- Put the peppers on a baking tray and bake for around 40 minutes until they are soft and the skins are going slightly black.
- Leave them to cool.
- Peel the peppers and remove the seeds.
- Cut into bite-size slices.
- Put in a dish with salt, pepper, garlic, enough oil to cover and a splash of vinegar.
Tastes best if made a few hours ahead.
