Baked Red Peppers

Baked Red Peppers.jpeg


  • Red Peppers
  • Rapeseed or Sunflower oil
  • Balsamic vinegar
  • Clove of garlic, finely chopped
  • Salt and Pepper to taste


  • Heat oven to 200°C
  • Put the peppers on a baking tray and bake for around 40 minutes until they are soft and the skins are going slightly black.
  • Leave them to cool.
  • Peel the peppers and remove the seeds.
  • Cut into bite-size slices.
  • Put in a dish with salt, pepper, garlic, enough oil to cover and a splash of vinegar.
Tastes best if made a few hours ahead.
