French cheese puffs

Makes around 30 – Preparation: 10 min – Cooking: 20 min
Ingredients:

250ml water

75g butter, cut into small pieces

1 tsp salt

150g plain flour

4 eggs
-
100g grated cheese of your choice
Method:

Preheat oven to 220°C.

Cover a baking tray with baking paper.

In a saucepan bring the water to the boil. Stir in butter and salt. When dissolved, add flour all at once and mix vigorously with a wooden spoon.

Remove from the heat and stir in the eggs one at a time, mixing well after adding each egg (mixture should be smooth and sticky).

Stir in grated cheese and mix well.

Using two spoons, form balls of around 2cm diameter out of the gougère mixture, place on tray and bake in preheated oven for 20 minutes until golden brown.
The gougères can be frozen.
No need to defrost, just put them on a baking tray and into a hot oven for a few minutes
Excellent for apéritif together with a glass of wine
