Lentil Dahl

Ingredients:

  • 1 onion
  • 2 cloves of garlic
  • Tin of tomatoes
  • 500ml vegetable stock
  • 170g red lentils
  • Tsp of lemon juice
  • Tsp garam masala
  • 1/2 tsp cumin
  • Tsp turmeric
  • 1/4 tsp chili power
  • 250ml coconut milk (optional)

Method:

  • Fry onion and garlic for a few minutes
  • Add the spices and fry for a further minute
  • Add the rest of the ingredients, bring to the boil and simmer for 25-30 minutes or until the lentils are soft.
Serve with rice, nan or baked potatoes
