Ingredients:

1 onion

2 cloves of garlic

Tin of tomatoes

500ml vegetable stock

170g red lentils
-
Tsp of lemon juice

Tsp garam masala
-
1/2 tsp cumin
-
Tsp turmeric
-
1/4 tsp chili power
-
250ml coconut milk (optional)
Method:

Fry onion and garlic for a few minutes
-
Add the spices and fry for a further minute
-
Add the rest of the ingredients, bring to the boil and simmer for 25-30 minutes or until the lentils are soft.
Serve with rice, nan or baked potatoes
