Enough for 2 people
Ingredients:
- 2 level TBS Green Peppers (if dried then soak in a little of the Brandy for an hour)
- ½ Onion or 2 Shallots
- 50 MLS Worcestershire Sauce
- TBS Brandy
- 20 CLS Double Cream
Method:
- Finely chop Onion and fry in a little olive oil until they change colour
- Add drained Peppercorns and reserve Brandy
- Add Worcestershire Sauce and reduce down to a glaze
- Add Brandy and stir
- Reduce heat to low and add the Cream
So long as it doesn’t boil it will keep warm until needed
