Pepper Sauce

Enough for 2 people


  • 2 level TBS Green Peppers (if dried then soak in a little of the Brandy for an hour)
  • ½ Onion or 2 Shallots
  • 50 MLS Worcestershire Sauce
  • TBS Brandy
  • 20 CLS Double Cream


  1. Finely chop Onion and fry in a little olive oil until they change colour
  2. Add drained Peppercorns and reserve Brandy
  3. Add Worcestershire Sauce and reduce down to a glaze
  4. Add Brandy and stir
  5. Reduce heat to low and add the Cream


So long as it doesn’t boil it will keep warm until needed
