Apricot Chutney

Makes about 3 x 350g

Ingredients:

  • 400g soft (or fresh) apricots stoned and cut in 8
  • 2 apples, peeled and cubed
  • 2 oranges, zest and juice
  • 150g soft brown sugar (Vergeoise)
  • 400ml cider vinegar
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 100g sultanas (raisins secs)
  • 1Tbsp ground ginger
  • 1 tsp sat
  • 1Tbsp cinnamon

Method:

  • Place apricots,apple, orange, sugar and vinegar in a saucepan and stir over
    low heat until the sugar has dissolved.
  • Add all other ingredientsĀ and bring to a boil, lower the heat and simmer gently
    1 1/2 to 2 hours stirring occasionally.
  • The chutney should be a thick, soft consistency and will thicken more
    as it cools.
  • Place in glass jars or use wax. Refrigerate.
