Psychedelic Mash

Serves 2-3


  • 1 large sweet potato
  • 1 beetroot about a quarter of the size of the sweet potato
  • 1 medium onion, finely chopped
  • 1 tbsp butter
  • 100grams St. Morêt (or similar) soft cheese
  • Salt ‘n’ pepper to taste


  1. Cook sweet potato and beetroot in microwave or oven.
  2. Fry onion in butter.
  3. Peel both Sweet potato and beetroot.
  4. Mash sweet potato. Grate beetroot.
  5. Mix everything together and season.
  6. Either reheat in saucepan or under the grill.
Serve as an accompaniment to meat or fish, instead of potato.
