Serves 2-3
Ingredients:

1 large sweet potato
-
1 beetroot about a quarter of the size of the sweet potato

1 medium onion, finely chopped

1 tbsp butter
-
100grams St. Morêt (or similar) soft cheese
-
Salt ‘n’ pepper to taste
Method:

Cook sweet potato and beetroot in microwave or oven.

Fry onion in butter.

Peel both Sweet potato and beetroot.
-
Mash sweet potato. Grate beetroot.

Mix everything together and season.
-
Either reheat in saucepan or under the grill.
Serve as an accompaniment to meat or fish, instead of potato.
